Paleo Beer Battered Fish

Well I have managed to make it through 2 weeks of my new job.  Things sure have changed in the working world since I left in 2008!  But I am enjoying my new life and the family is still in adjustment mode.

I really don’t have a routine yet when it comes to dinner, although one is forming all by itself based on the kids schedule and activities.  Wednesday for some reason just seems to be ‘anything goes’ night, and to be honest, I’m fine with that.

I find planning on the weekends to be ESSENTIAL if I want to get out of the kitchen in under an hour (including prep and cleanup).

Which leads me to this beer battered fish recipe that I made last week.  I will admit I was skeptical but it turned out even better than I had anticipated.

The best part is this is recipe is :

  • GLUTEN FREE, (as long as you use a gluten free beer).
  • DAIRY FREE and
  • PALEO FRIENDLY

The beer batter makes a very light, crisp tasting fish.  It is not heavy or oily and totally different then a breaded fish.  Your fork will crunch through the batter to find a perfectly cooked moist tender fish inside.

Beer battered fish is traditionally served with French fries and coleslaw as side dishes, but a side of broccoli never killed anyone either!  🙂

Paleo Beer Battered Fish

Ingredients

(2) 6 oz fillets of white fish (cod, haddock, sole)
BATTER:
1/2 cup tapioca flour
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp paprika
1/4 tsp pepper
1/8 tsp cayenne
1 egg
1/4 cup gluten-free beer

Instructions

  1. Cut each fish fillet into 3" or 4" pieces
  2. Make the batter by combining all the ingredients and stirring well. Let it sit for 10-15 minutes
  3. When ready, coat the bottom of a large skillet with olive oil and heat over a med/med high heat until it splatters if you flick water on it
  4. Dip each fillet piece into the batter, coat well, and carefully place into the heated oil
  5. Depending on thickness, cook between 2-4 minutes per side
  6. Place on paper towels to drain and serve
