Boy what a ding-a-ling I am.  I have bought jarred salsa since the inception of time and it took me under 10 minutes to do it at home.

And I didn’t even have to go out and buy anything.

Salsa is one of those recipes where fresh ingredients are apparent.  You just can’t taste fresh cilantro or lime in the jarred versions.  They all seem to taste watered down to me and just bland.

Nothing beats the freshness of the lime, tomatoes and cilantro when salsa is freshly made.

What I like the most about making salsa at home is you can turn UP the heat for those who like it HOT or turn it DOWN for the kiddos.

So I decided to do just that this Memorial Day Weekend!  After pulsing this salsa in my food processor a few times, I took half of it out because it was relatively mild.

Then I added in some diced jalapenos, a sprinkle of cumin and chili powder to kick it way up for those of us who like some heat!

Fresh really makes a difference in salsa.  I also find the flavors are much better 2 days out and served REALLY cold.

When I serve it immediately I find the cilantro is overpowering.  If you like cilantro it shouldn’t be a problem but I’m eeehhh when it comes to cilantro so I like it to be a little mellower if you know what I mean.  🙂

Ingredients

1 Cup Organic Onion, roughly chopped
1 Cup Organic Bell Pepper (I used red and green)
5 cloves Organic Garlic, roughly chopped
1 (28 oz) Can Organic Crushed Tomatoes
1-2 Chipotle Peppers (from can)
1/2 teaspoon pure cane sugar
3 Tablespoons Fresh Organic Lime Juice
Handful of Organic Cilantro or Parsley
1 teaspoon sea salt
1/4 -1/2 teaspoon freshly ground pepper

Instructions

  1. Begin by roughly chopping the onions, peppers and garlic
  2. Place them in a food processor and pulse a few times to break up the larger chunks
  3. Add the remaining ingredients and pulse a more few times to your desired consistency
  4. Chill and serve with tortilla chips
