Blackened Fish Taco Bowl



Have you tried these “Bowls”?  They are all the rage right now and they are simply fabulous!  It’s kind of a spin off of a Taco Bowl, you know the one that has that big ole’ fried shell and all the fixins’ are stuffed in it?

Well this ‘Taco’ Bowl doesn’t have any taco in it.  So we are avoiding all the fried shells and instead just layering it in a bowl.

I KNOW!  Genius!

In order to have a good ‘bowl’ you need to have good ingredients.   You can use simple brown rice.  But that would be boring.  So instead we are using the Cilantro Rice we posted a few weeks ago.  You see when you make bowls like this, there is a layering affect that happens with the food.


So imagine if you will, the perfectly cooked brown rice with this really light lime flavor.  It is so refreshing!  Now add to that some roasted red onions, red peppers and corn that have been sautéed in a cast iron skillet with nice sear marks and caramelization.

Add some yummy black beans for tons of protein and fiber!


Then add to it blackened fish that has all the spices of Mexico.  Chili, cumin, garlic, cayenne pepper.   Be sure to break it up into little bite size pieces ~ that way you won’t have to slow down to use a knife, therefore keeping the shoveling into your mouth at a consistent pace.


Now pile on the fixins’ !!!  For me it’s diced avocado, shredded lettuce and cabbage and I must (MUST) throw in a dollop of hummus.

Guacamole and sour cream are no brainers, but if you’re avoiding dairy like I am, give hummus a try in place of sour cream.


Oh – Me – Oh – MY !!!!

  • Cilantro Lime Brown Rice
  • Blackened Fish
  • Roasted peppers, onions, black beans and corn
  • Topped with avocado, lime juice, hummus and anything else you want!

This one is a DEFINATE keeper in this house!  And next time I’m making it with SHRIMP!

Blackened Fish Taco Bowl


Fish Rub:
1/2 Tablespoon chili powder
1 Tablespoon cumin
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper (or more to taste)
1/4 teaspoon smoked paprika (or regular if you don't have it)
Pinch of oregano
Pinch of salt and pepper
4 pieces of white fish (I used Cod and Tilapia)
1 cup organic corn kernels
1/2 cup organic red onion, diced
1 cup organic red pepper (1 small)
1 can organic black beans, drained and thoroughly rinsed
2 cups cooked Cilantro Rice
Optional Toppings:
Fresh parsley or cilantro, sliced avocado, guacamole, hummus, shredded lettuce, shredded cabbage, lime


  1. Combine the spices for the fish rub in a small bowl. Sprinkle the rub over the fish and rub in
  2. Heat a large cast iron skillet for a few minutes over low/med heat. Add a little olive oil and add the fish. How many you add will depend on the size of your pan as well as the fish. Try not to add more than 4 because you want them to sear and blacken. So make sure you pan is very hot to start with. Cook for 2-3 min per side without moving. The fish should be white and flaky when cooked through
  3. Remove the fish and keep warm
  4. Wipe the skillet if you need to remove any leftover pieces of fish and add another Tablespoon of oil
  5. Add the red onion and red pepper, stir and season with salt and pepper
  6. Immediately add the corn and mix. Let these veggies cook undisturbed to sear for about 2 min
  7. Add the black beans - stir to combine and cook another few minutes until the veggies are tender
  8. To serve: Add some rice in a bowl, top with black beans/corn and then the fish. Squeeze with some fresh lime juice and garnish with shredded lettuce or cabbage, hummus, cilantro, etc.
