I am always in search of desserts that are on the ‘healthier’ side and by that I mean avoiding refined sugars and white flours. So as you can imagine that is somewhat limiting.
I came across these brownies from ChocolateCoveredKatie and decided to give them a try. They were so delicious, even my kids liked them.
They are so chocolately and chewy and simply amazing. But you’re probably saying to yourself, “almond butter Deb? In BROWNIES?”
You have to trust me on this. You CANNOT taste any type of peanuty or almondy flavor. It’s PURE chocolate!
I did go ahead and add about 1/4 cup of mini chocolate chips on top ~ and yes, I know they are processed. Maybe I even used less than that, I’m not sure. You don’t need much, just something, because of the lack of sugar in these brownies, it helps offset the bitterness the cocoa can give.
Are you ready for the ingredients?
- cocoa powder
- almond butter
- pure maple syrup
- old fashioned rolled oats, gluten free if desired
- baking soda
- flax seeds
What DON’T these brownies have?
- refined sugar
- white flour
- artificial ingredients
- ‘natural’ flavors
- soybean oil
- xanthum gum
And because there is no flour they are a SNAP to make.
You pulse the oats in a food processor until they are very fine, add the rest of the ingredients (minus the choc chips) – pulse again, give it a few swirls with a spoon, add your chips and spread it into a pan.
