Buttery Garlic Shrimp

Garlic and butter.  I ask you, is there anything better?

This dish is so summery and light and comes together in under 20 minutes.

There are several variations to this.  A traditional shrimp scampi recipe will have butter along with white wine and can be either baked in the oven or done on the stove.

For this recipe, I wanted to keep it simple and in one dish.  So using my handy cast iron skillet, I melted some organic butter and sautéed the shrimp for 2-3 minutes.  They were removed and kept warm while the garlic, chicken stock, lemon juice and parsley were added.

I chose to serve these succulent buttery shrimp over rice because my daughter is gluten intolerant.   However, there is enough butter to go beautifully over angel hair pasta.   You can serve this with a big Caesar salad and crusty bread for a great summer meal.

Buttery Garlic Shrimp

Ingredients

1 1/2 - 2 pounds shrimp, peeled and deveined
8 tablespoons (1 stick) organic butter, divided
5 cloves fresh garlic, minced
1/4 cup chicken stock
Juice of 1 lemon
2 tablespoons chopped fresh parsley leaves

Instructions

  1. Melt 2 tablespoons of butter in a large skillet over medium high heat. Once melted and sizzling, add the shrimp and season with a pinch of salt and pepper.
  2. Cook until the shrimp turn pink and curl up, about 2-3 minutes.
  3. Remove the shrimp to a plate but keep the butter in the pan.
  4. Add the garlic to the skillet, and sauté until fragrant, about 1 minute.
  5. Stir in the chicken stock and lemon juice. Bring to a boil; reduce heat and simmer until reduced by half, about 1-2 minutes.
  6. Stir in the remaining butter, 1 tablespoon at a time, until melted and smooth.
  7. Return the shrimp to the pan and gently toss to combine.
