Make THIS! Not THAT!: Peanut Butter Cookies

I recently came across a recipe on Allrecipes.com for peanut butter cookies.  I don’t want to call attention to any one person in particular or their recipe, it’s more the ingredients I wanted to focus.  And they are:

  • 1 cup of butter
  • 1 cup peanut butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 1/2 cups white flour

My family (and I) enjoy cookies just as much as the next guy.  But to be honest, all that white sugar and flour just isn’t healthy.

First off, white flour does not start out white, it needs to go through a bleaching process to get it that way.  Another process is bromating the flour with potassium bromate, which is considered to be a category 2B carcinogen.

The sugar, as you know by now, comes from the sugar beet which is one of the most common GMO products. 

I’ve played with numerous peanut butter cookie recipes that have 5 ingredients or less, but again, most of them have a 1:1 ratio of peanut butter to sugar.

That’s when I finally came up with this recipe.  It is a flourless peanut butter cookie recipe that calls for less than 1/2 cup of sugar.  I use organic cane sugar – I get mine at Costco – so I know it isn’t a genetically modified product.

Just in case you haven’t made flourless cookies before, they do not have the same texture as a cookie with flour.  They are much more crumbly and satiating.

I also find freezing them does wonders.  They don’t actually freeze so you can eat them straight out of the freezer, they just hold together better.

I chose these Simply Cookies from Pilsbury because the big corporations are responding to consumer demands.  As the name implies, they are just SIMPLY cookies, with SIMPLE ingredients.  These companies see a ton of money going towards healthier, organic options and wanted to jump on the money train.  However, as only big corporations can do, they managed to make this cookie just as unhealthy as their other products.

Sugar – listed as the FIRST ingredient and again before the eggs.  Non organic cane sugar is not only a refined product, but a genetically modified product as well.

Palm Oil, Canola Oil, Cottonseed Oil
– how many oils do we need to make these cookies? If you haven’t read up on how the process of how hydrogenating oils works, or the effect it has on our health, Google “hydrogenated oils”.  If something needs a chemist to restructure it before I eat it, I’d rather avoid it.
