Smoked Paprika Chicken with Green Olives

smoked paprika chicken with olives

This chicken dish has a nice Mediterranean flair with the olives.  Don’t use jarred olives, get good, big, fresh green olives from an Italian store or salad bar.

As the chicken, olives and onions cook down, along with the smokiness from the paprika, it creates the most wonderful juice to spoon over the chicken. smoked paprika chicken with olives

Place some of the onions on the bottom of a baking dish and drizzle with olive oil.  Position the chicken, olives and the rest of the onions on top and bake for approximately 40 minutes until the chicken reaches an internal temperature of 160 degrees.

  1. I love Mediterranean recipes! This Smoked Paprika Chicken looks absolutely delicious :)

    • it came out better than expected. Sometimes I just make these things as a trial run, not for an actual dinner and the whole family grabbed a drumstick (or 2) and started eating! Let me know what you think if you decide to try it! Next time I will be making more than 6 for sure ;)
