Smoked Paprika Chicken with Green Olives

This chicken dish has a nice Mediterranean flair with the olives.  Don’t use jarred olives, get good, big, fresh green olives from an Italian store or salad bar.

As the chicken, olives and onions cook down, along with the smokiness from the paprika, it creates the most wonderful juice to spoon over the chicken. smoked paprika chicken with olives

Place some of the onions on the bottom of a baking dish and drizzle with olive oil.  Position the chicken, olives and the rest of the onions on top and bake for approximately 40 minutes until the chicken reaches an internal temperature of 160 degrees.

Smoked Paprika Chicken with Olives


1 package chicken drumsticks (6)
1 large white or sweet onion
6-8 large green olives
1 Tablespoon smoked paprika
1/2 - 1 teaspoon kosher sea salt
1 teaspoon garlic powder
1/4 teaspoon pepper


  1. Preheat an oven to 400 degrees
  2. Coat the bottom of a baking dish with olive oil (not a lot just enough to coat it)
  3. In a small bowl combine the paprika, garlic powder, salt and pepper
  4. Layer half the onions in the dish and sprinkle with a little bit of the paprika and move them around to coat with the oil
  5. Slather the chicken in the paprika rub and place the chicken, olives and remaining onion on top
  6. Bake for approximately 40 minutes or until a thermometer reaches 160 degrees

    • it came out better than expected. Sometimes I just make these things as a trial run, not for an actual dinner and the whole family grabbed a drumstick (or 2) and started eating! Let me know what you think if you decide to try it! Next time I will be making more than 6 for sure 😉
