Homemade Hamburger Helper ~ Beef Stroganoff

There aren’t many things I can promise, but one thing I can …. this beef stroganoff dinner is on the table in 20 minutes!  This is a one pan, easy peasy, weeknight dinner that we all need in our menu rotation!

Now as a mom I love this recipe.  Even though I run this blog and experiment in my kitchen all the time, there are times I either don’t feel like cooking or we’re too busy running around for me to spend the time cooking.

That’s when meals like this come to the rescue.  What I do to make this even more of a blessing is make sure I always have ground beef in the freezer.  Then when I realize at 3:45 that I forgot little Susie’s tap dance lesson, I can just grab the meat out of the freezer and when we get back dinner is still ready in under 20 minutes!

Another great thing about this recipe is how inexpensive it is to make it.  All I really needed to get was fresh ground beef.  I had all the rest on hand.

It’s really simple.  Let me show you.  Start by browning your beef, onions and garlic until the beef is no longer pink.  Sprinkle on some cornstarch so it thickens the sauce.

Add your milk, broth, spices and noodles and let it cook for 10-12 minutes.

Finish it off with some sour cream and you have yourself a dinner in under 20 minutes without the help of boxed, powdered sauces!

Homemade Hamburger Helper Beef Stroganoff

Homemade Hamburger Helper Beef Stroganoff


1 teaspoon olive oil
1/4 cup onion, finely chopped
1/2 tsp garlic, minced
1 lb organic ground beef
8 ounces wide egg noodles
2 cups milk
1 1/2 cups beef stock
1 Tablespoon cornstarch
1 teaspoon salt (optional)
1/4 teaspoon pepper
1/4 teaspoon paprika
1/4 tsp chili powder
2/3 cup sour cream


  1. Heat a large skillet over high heat and add the oil, onion, ground beef, garlic. Break up the beef as it cooks with a fork into small pieces. Cook until the beef is browned. Drain
  2. Sprinkle the cornstarch over the meat mixture - stir to combine
  3. Add the milk and heat to boiling, while stirring
  4. Add the beef broth, spices and noodles
  5. Lower heat to a simmer, cover and cook (stirring frequently) for 10-12 min or until noodles are tender
  6. Add the sour cream and cook another minute or two

  1. I’ve made this once and I LOVED it! I thought it was SOOOOO much better than the boxed version. Of course the hubby is loyal to his box, didn’t agree with me. But hey, I’m doing the cooking, so he can learn to love it like I do! Lol!

  2. Hey! Not being rude in any way, just an FYI since I see your looking to cut GMO’s from your food. Corn starch is likely GMO. Also, if you aren’t making the beef stock from scratch you’ll be consuming either MSG or Autolyzed Yeast, or yeast extract which are also MSG. Nice job on everything!

    • Hi Dana! I agree with you totally. We’re still working on it. I wouldn’t be honest if I didn’t say there’s still some processed foods hanging around and beef broth is one of them. I have yet to venture into making my own. It’s on my to-do list. Thanks for your comment.
