Intrigued by her love of the Almond Joy (and anything coconut for that matter) the idea of blending rich dark chocolate with the sweetness of shredded coconut sparked her creativity. However, she wanted to create something with the least amount of ingredients possible.
With each stir of the spoon, Debi marveled at how the ingredients came together. She rolled the coconut mixture into small, bite-sized balls and placed them on a parchment-lined baking sheet, her heart aflutter with excitement.
As the dark chocolate melted over a gentle flame, filling the kitchen with its rich aroma, Debi dipped each coconut ball into the velvety chocolate, coating them with a decadent layer of sweetness. With a sprinkle of shredded coconut on top, the dark chocolate coconut bites glistened like precious gems, ready to be shared with those she held dear.

- Pure Maple Syrup: Maple syrup acts as the natural sweetener in this recipe. It adds sweetness to the coconut filling while also providing a subtle depth of flavor. Additionally, it helps bind the ingredients together.
- Coconut Oil (Warmed): Coconut oil serves a dual purpose in this recipe. Firstly, it helps bind the coconut filling together, ensuring that it holds its shape. Secondly, when warmed, coconut oil becomes liquid, making it easier to mix with the other ingredients and coat the coconut bites evenly.
- Pure Vanilla Extract: Vanilla extract adds a hint of warmth.
- Dark Chocolate: The dark chocolate is used to coat the coconut filling, creating the signature outer layer of our almond joy bites. Look for organic chocolate with a high percentage of cocoa in it.
How to Make Dark Chocolate Coconut Bites:

Description
These dark chocolate coconut bites are made with natural ingredients like shredded coconut, maple syrup and coconut oil for a treat that’s mindful of your health while satisfying your dessert cravings.
Ingredients
- 2 Cups Shredded Coconut
- 4 Tbsp. Pure Maple Syrup
- 5 Tbsp. Coconut oil, warmed
- 1 teaspoon Pure Vanilla extract
- 1–85-90% Organic Dark Chocolate bar, chopped up (I used Green & Black)
Instructions
- Start by adding the shredded coconut to a food processor and pulsing until it reaches a fine consistency.
- In a large mixing bowl, combine the shredded coconut, pure maple syrup, warmed coconut oil, and vanilla extract. Mix until well combined.
- Using a spoon or cookie scoop, scoop out portions of the coconut mixture and roll them into (12) small balls using your hands. Place the balls on a parchment-lined baking sheet.
- Once all the coconut mixture has been rolled into balls, place the baking sheet in the refrigerator for about 15-20 minutes to allow the balls to firm up.
- While the coconut balls are chilling, melt the 85% organic dark chocolate bar in a heatproof bowl over a pot of simmering water, or in the microwave in short bursts, stirring frequently until smooth.
- Remove the coconut balls from the refrigerator. Using a fork or dipping tool, dip each coconut ball into the melted dark chocolate until fully coated. Tap off any excess chocolate.
- Return the chocolate-coated coconut balls to the parchment-lined baking sheet.
- Once all the coconut balls are coated in chocolate, place the baking sheet back in the refrigerator for another 15-20 minutes to allow the chocolate to set.
- Once the chocolate has set, remove the dark chocolate coconut bites from the refrigerator and serve. Enjoy these delicious and indulgent treats!
